Valentine’s Day is just around the corner, and what better way to celebrate than by cooking dinner for your loved one at home? If you weren’t able to secure a table at your favourite restaurant this year, don’t worry—we’ve got you covered with two mains and two desserts that will turn your kitchen into the best local dining destination. Using Dale Farm’s delicious dairy products including Double Cream and Vanilla Custard, these dishes are simple, easy to make and perfect for a cosy night in.

Creamy Spaghetti and Meatballs

Creamy Spaghetti and Meatballs

Nothing says romance like a comforting bowl of creamy spaghetti and meatballs. This dish is a twist on the classic, made extra special with Dale Farm Double Cream.

Ingredients:

  • Chicken or beef meatballs

  • 3 tbsp butter

  • 1 small onion, finely chopped

  • 5 cloves garlic, minced

  • 1 tin of finely chopped tomatoes

  • ½ tsp sugar

  • 1 ½ cups Dale Farm Double Cream

  • 12 oz spaghetti, broken

  • 2 tsp mixed Italian herbs

  • 1 tsp garlic powder

  • 1 tsp sweet paprika

  • Salt & pepper to taste

Instructions:

  1. In a pan, cook your meatballs and then set aside for later.

  2. In a large skillet, melt the butter over medium heat. Add the onion and sauté until softened.

  3. Stir in the minced garlic and cook for another minute before adding the tinned tomatoes. Bring to a gentle simmer.

  4. Add sugar, salt, and pepper to taste. Stir in Dale Farm Double Cream and let it simmer for 2-3 minutes.

  5. Add in all the seasonings and mix well.

  6. Cook the spaghetti in the sauce for 5 minutes, allowing it to absorb the flavours.

  7. Gently toss in the meatballs and serve hot, garnished with extra Parmigiano-Reggiano.

This tasty Chicken Alfredo is sure to make you melt!

Ingredients: For the chicken:

  • 2 chicken breasts

  • 1 tsp salt, pepper, paprika, garlic powder

  • 3 tbsp olive oil For the pasta:

  • 2 tbsp butter

  • 4 cloves garlic

  • 100ml Dale Farm Double Cream

  • 1 tsp salt, and pepper

  • 60g parmesan

  • 200g tagliatelle

Garnish:

  • Fresh parsley

  • Grated parmesan

Instructions:

  1. Butterfly the chicken breast and flatten to equal thickness.

  2. Season the chicken and fry in olive oil for 2-3 minutes per side. Set aside.

  3. Lower the heat, add butter and chopped garlic to the same pan, stirring to avoid burning.

  4. Cook pasta according to packet instructions.

  5. Add Dale Farm Double Cream to the garlic and season with salt and pepper.

  6. Stir in grated parmesan and a ladle of pasta water to create a smooth sauce.

  7. Toss in the cooked pasta and serve topped with the fried chicken, fresh parsley, and extra parmesan.

Crème Brûlée French Toast

Our take on French toast combines crispy caramelised brioche with creamy Dale Farm Vanilla Custard.

Ingredients:

Instructions:

  1. Chop brioche rolls into chunks. Mix soft butter and sugar together and coat each cube.

  2. Caramelise each side in a frying pan over low heat, then place on a cooling rack.

  3. Pour Dale Farm custard into an ovenproof dish, add the brioche chunks, and warm in the oven at 170°C for 10 minutes.

  4. Drizzle with warm salted caramel sauce and dust with icing sugar before serving.

Raspberry Eton Mess

Raspberry Eton Mess

A light yet beautiful dessert, this Raspberry Eton Mess is perfect for finishing off your Valentine’s Day meal on a sweet note.

Ingredients:

  • 250g raspberries

  • 2 tbsp icing sugar

  • 40g mascarpone

  • 200ml Dale Farm Double Cream

  • 1 tbsp icing sugar

  • 1 tsp vanilla extract

  • 40g meringue

Instructions:

  1. Mash raspberries with icing sugar to create a puree.

  2. In a separate bowl, whisk mascarpone, Dale Farm Double Cream, vanilla extract, and icing sugar to stiff peaks.

  3. Crush meringue nests and gently fold into the cream mixture, along with some raspberry puree.

  4. Divide between four glasses, spoon extra raspberry puree on top, and sprinkle with crushed meringue.

  5. Garnish with a whole raspberry and a sprig of mint or basil.
