1. For the rice pudding, place all of the ingredients into a saucepan and bring to a boil
2. Reduce to simmer over a low heat for 25 minutes, stirring occasionally
3. While the rice pudding is cooking, toss all of the fruits in maple syrup or honey until well glazed
4. Let these caramelise in the pot then place on top of the rice pudding
5. Serve and enjoy!
